Pistachio Encrusted Fish

Ingredients

  • 1 lb of cod, halibut or other white fish

  • 1 cup of roasted and salted pistachios shelled

  • 1/4 cup of olive oil

  • 2 tablespoons lemon zest

  • Parchment paper

Directions

  1. Preheat oven to 350.

  2. Place fish on baking sheet with parchment paper.

  3. Salt and pepper fish. 

  4. Pulse pistachio nuts and olive oil in food processor a few times and then stir in lemon zest. (It should make a very chunky paste with larger chopped nuts.)

  5. Spread paste evenly over fish.

  6. Bake in oven at 350 for 20-25 minutes or until fish flakes.
