Paleo Friendly Protein-Packed Frittata Recipe

8-inch to 10-inch cast iron pan

Ingredients
1 T ghee or olive oil
1/2 lb ground chicken
1/2 t dried sage
1 t dried basil
1/2 t ground fennel
1/2 t sea salt
1/4 t black pepper
2 cups chopped kale
8 large eggs, beaten
2 T sliced almonds
Directions
Preheat oven to 400°F.
Heat olive oil in skillet over medium heat.
Add ground chicken and cook 2-3 minutes, breaking up meat with a spatula.
Stir in sage, basil, fennel, sea salt and black pepper.
Cook 3 minutes longer.
Remove cast iron pan from heat and stir in kale.
Let sit 2-3 minutes to wilt.
Pour whisked eggs evenly over the top and scatter almond slices.
Transfer to preheated oven. Cook 15-20 minutes, until eggs are set.
Slice and serve hot.
