Paleo Egg Nog
Ingredients
4 egg yolks
2 cans of full fat Organic Coconut Milk
1/4 cup Maple Syrup
1 teaspoon Nutmeg (adjust to taste)
¼ tsp of Cinnamon
rum, brandy or bourbon (optional)
Directions
Beat yolks for a couple minutes and gradually add maple syrup. Set aside for now.
In a saucepan, bring the coconut milk to a low simmer and then add cinnamon and nutmeg. Make sure you don’t bring the coconut milk to a boil.
Slowly add a spoonful of the hot milk mixture to the egg yolks and stir. Repeat until you have about a cup of milk in your egg mix. This allows the eggs to be added to the saucepan without hardening.
Add the egg mixture to the saucepan. Heat mixture a few minutes.
Let the egg nog cool a little and then add alcohol.
Serve warm or put into the fridge to cool.
Sprinkle with nutmeg and cinnamon before serving.
