Best Paleo Holiday Cookie Recipes

Here are some of our favorite cookie recipes for the holidays:

  • Raw Brownie Bites - Paleogrubs

  • Gingerbread Snap Pumpkin Butter Cookie - PaleOMG

  1. Paleo Thin Mints from Elana's Pantry These are AMAZING!!  Dipping them in chocolate was a bit challenging without damaging the cookies (maybe we made them too thin), so we just swirled some chocolate on top. 

  2. Raw Brownie Bites from Paleogrubs Kristen Gruca brought these to the CrossFit Sanitas holiday party and they were delicious and take less than 20 minutes to make!

  3. Gingerbread Snap Pumpkin Butter Cookie from PaleOMG Ryan Zachos brought these to the holiday party as well and I tried the recipe last night.  Very good but definitely took more like 40 mins.  

  4. Sweet Potato Cookies These were in the November issue of Paleo Magazine and they are delicious, even with only 2 TBSP of maple syrup. We added mini chocolate chips, but those are optional.

Ingredients

  • 1 cup almond meal

  • 1 cup cooked and mashed sweet potato, pumpkin or butternut squash (canned is fine)

  • 1/2 cup finely chopped walnuts

  • 1/4 cup coconut milk

  • 1 egg

  • 2-4 TBSP maple syrup

  • 1 TBSP cinnamon

  • 1/2 tsp baking powder

  • 1/2 cup mini chocolate chips

Directions

  1. Preheat Oven to 400.

  2. Stir together dry ingredients.

  3. In another bowl, whisk together egg, coconut milk and maple syrup.

  4. Stir together wet and dry ingredients.

  5. Add mashed sweet potato and mix in mini chocolate chips.

  6. Line baking sheet with parchment or grease pan with coconut oil and scoop 1 heaping tablespoon per cookie onto the baking sheet.

  7. Bake for 20 minutes.
