Banana Scrambled Eggs

Ingredients

  • 1 tablespoon coconut oil

  • 1 banana

  • 2 eggs

  • spices like cardamom, cinnamon, cloves, etc.

  • optional additions like blueberries, nuts, etc.

Directions

  1. Melt coconut oil in small nonstick pan.

  2. Cut bananas lengthwise and then into small half circles and brown on medium heat for about 3 minutes.

  3. Whisk spices of your choice into the two eggs until thoroughly combined and add to pan stirring until cooked through.

*When finished you can add any additional toppings, such as blueberries, chopped walnuts, etc.
